Claypot Chicken and Ginger Rice

Ingredients

  • 2 Cups Koshihikari rice
  • 1/3 Cup Dashi broth
  • 2 Tbsps Sake
  • 2 Tsps Light soy sauce
  • 2 Tsps Sesame oil
  • 1/4 Cup Ginger, julienned
  • 1 Lb Chicken thighs, cubed
  • 1/2 Cup Shiitake mushrooms, sliced
  • 1/2 Cup Edamame, shelled
  • 1/2 Cup Carrots, julienned

Directions

  • Rinse and wash rice

  • Add washed rice, dashi broth, sake, light soy sauce, and sesame oil to clay pot/donabe, and soak the rice for 20 minutes

  • Layer the chicken, carrots, ginger, and mushrooms on top of the rice

  • Heat on medium-high heat for 15 minutes, covered

  • Keep lid covered when time is up and steam for another 30 minutes

  • Open the lid and add edamame and mix the ingredients thoroughly

  • Serve
